Artichoke Hearts with Serrano Ham

Ingredients

  • 1 jar (about 14 oz.) of plain artichoke hearts
  • 2 tbsp. olive oil
  • 1 to 2 tsp. of crushed fresh garlic
  • 1 to 2 tsp. of chopped parsley
  • 1 red roasted pimento, cut in strips
  • 1 tsp. Spanish paprika
  • 1 to 2 tsp. red wine vinegar
  • about 4 oz. of Serrano ham (cut in pieces)

Instructions

Drain the artichokes and discard the water. Place the artichokes in a frying pan with the olive oil, add the garlic, parsley, and pimento. Sauté them over medium heat and sprinkle the paprika to coat the artichokes. Add the Serrano ham, blending with the artichoke mixture, immediately add the vinegar, mix well until heated and serve.

French Onion Soup

Ingredients

  • 15 onions, julienned and caramelized in butter/oil/bacon fat if you have
  • Add 2 tbsp Roasted Garlic, salt and pepper, little brown sugar
  • Deglaze 2 cups each Sherry and red wine
  • Add 8 qts beef broth
  • 1/3 cup cleaned, lightly chopped, fresh thyme
  • 2 bay leaves
  • 1/2 cup Worcestershire
  • 1/4 cup soy sauce
  • 1/3 cup cocoa powder
  • 1/ 1/2 tbsp ground black pepper

Instructions

Simmer until onions completely tender.

Adjust and season if necessary, add water if too salty, fortify with any available meat braising liquid if on hand. Top with Garlic Bread and slice of Toasted Gruyere Cheese.

Champiñones Al Ajillo

Mushrooms Sautéed with Garlic – From Don Quijote

Ingredients

  • 1 lb. Medium Sized Mushrooms
  • 2 to 4 Tbsp. Olive Oil
  • 2 tsp. Chopped Parsley
  • 1 tsp. Crushed Chili Pepper Pods
  • Salt to Taste
  • 4 to 6 Crushed Garlic Cloves
  • Squirt Dry White Wine

Preparation

Place the mushrooms (already cleaned and cut in half) in a pan with the oil. Add the parsley, chili pepper pods and salt. Cook over high heat mixing occasionally for about 2 minutes or until they start to get soft. Add the garlic and the wine.

Mix well and enjoy!
